Good food should be simple. Well this is certainly good and simple, however because it is so simple it really deserves good ingredients – homemade stock, organic lemons, nice cheese and young fresh spinach.

I was actually really lucky because I am currently sick with the flu but I managed to somehow forsee my need for chicken soup. On saturday I was already feeling tired and under the weather so I went to the butcher and got a bunch of turkey necks and backs and made stock. I saw Rachael Ray make a version of this the other day and thought that she was onto something with the combination of the lemon and spinach. Plus when you are sick what could possible be better nutrient wise?
Hopefully I am making sense…
2 cups chicken stock, homemade if at all possible
3/4C frozen tortellini
1 handful fresh spinach
1 teaspoon Parmiggiano Reggiano, freshly grated
1 teaspoon lemon zest
1 teaspoon fresh lemon juice, amount a wedge worth
salt and pepper
1. Heat the stock to a boil and cook the tortellini.
2. Put a handful of spinach in a soup bowl. Ladle the soup over top and squeeze in lemon and stir.
3. Grate chees

Though from your comments, it would seem you used turkey stock rather than chicken stock. I think this is definitely gonna go on my list of things to make in the coming pay period!
I did use Turkey stock cause that is what I had, chicken stock or any homemade broth would be good I think.
