Mixed Bean and Goat Cheese Dip Recipe

My friend Sarah is extremely adept at her dips. She throws something together without measuring and it is always super fantastic. I watched her do it this past weekend using only what was available and it was pretty impressive. I would never have put a can of mixed beans in, but it was great!

Mixed Bean and Goat Cheese Dip RecipeHere is the gist. In a food processor blend 1 drained can of artichokes, 1 small package of chevre, 1 can bean medley, 1 clove of garlic, some lemon juice and lemon zest as well as some fresh herbs. The herbs used in this case were fresh oregano, chives and thyme. Add olive oil as necessary to get the right consistency. Taste for seasoning and add salt and pepper.

Bean dips are great because they aren’t the usual fare and one can play around with the ingredients…noted!

It is a beautiful plate isn’t it? It fully isn’t mine. Sarah also made some homemade whole wheat bread. Such a treat. I tend to like bread but I supposed traditionally you would go with pita bread…
