Grilled Lamb Chops with Rosemary and Garlic Recipe

by katerina on September 14, 2007

I love lamb, and make lamb stew and lamb shanks frequently but am new to cooking the lamb chop. However I was impressed by how easy they were to grill. Lamb is so beautiful when paired with rosemary and garlic. The sweet flavour of the meat can really stand up to the strong pungent flavour and smell of rosemary.

(serves 4)

4 lamb chops, trimmed
3 sprigs fresh rosemary
2 cloves garlic
2T olive oil
salt and freshly ground pepper

Remove the leaves from the rosemary and roughly chop. Mince the garlic and combine with the rosemary and olive oil. Generously salt and pepper the chops and toss in the oil mix. Cover and refrigerate for 1-4 hours.

Preheat a grill to medium and grill over direct heat for approximately 2-4 minutes per side or until it reaches 145F internally for medium rare. (Don’t forget to turn the meat to get those nice grill marks.) Let the meat rest for 3 minutes before serving.[/print_this]

I guess it is a form of flattery, Katerina…but I can sure understand your frustration. They are thieves, plain and simple. I don’t have any suggestions–but I do empathise. I read your blog every day, and I love it. I like reading about your recipes, and your adventures. You are talented! And I am sorry that others think they can ‘be’ you.

They are thieves. I hope you find a solution!

darien – thanks so much for your kind words. I agree it is a form of flattery and what can you do? I am still mulling over adding a “Read More” link to get to the whole post but I am a big believer that just hinders people who validly want to read the blog and those who are going to troll can get around it easily – sort of like Windows Genuine Advantage stuff. Sigh.

katiez – thanks, I think the picture actually captured just how good they looked!

Katerina…out the “thieves” so pressure can be applied.

As for the lamb chops…I could even eat those for breakfast!
