Blue Cheese Macaroni and Cheese Recipe There is nothing like some gooey cheesey goodness to make a bad gray day fade away. Everything outside is drab and almost always drizzling. I don’t care if everyone is on diets this time of year I just want comfort food. So I adapted a blue cheese macaroni and cheese recipe and made a big batch which was delicious and made a great lunch for the next day. Oh, and if you serve the macaroni and cheese with a salad I believe it becomes a healthy meal. I have made macaroni and cheese with cheddar and broccoli before and even with butternut squash, but this blue cheese mac and cheese is something truly extraordinary.

Kat, you rebel you! Mac & cheese is forgiveable after the holidays but blue cheese Mac & cheese is pure sin…I love it!

Blue cheese mac & cheese sounds really good! I have really been into gorgonzola cheese lately.

Classy macaroni! heehee. Another classy addition to macaroni? Try a tablespoon of pesto added at the end. Sooo tasty (and garlic-y) I even put it in Kraft Dinner.

I love macaroni and blue cheese, so this sounds good to me too, but unfortunately, Graham hates blue cheese, so I stick to having it with oatcakes. Ho hum!

Just made this with a roasted leg of lamb. PERFECT compliment. Very easy and delicious. I used panko bread crumbs
