Daring Bakers: Lemon Meringue PieThe Daring Bakers strike again, this time challenging me with that darn pastry making. After the bostini I felt pretty confident in my egg white whipping abilities – or that of my kitchen aid at least- but pastry is altogether different. In the end though, it was the custard that was my undoing.

Never underestimate the custard. But lets start with what I thought would be the most challenging part – the homemade pie dough. The crust was actually quite successful, in fact I even impressed the boyfriend (a self declared pie expert). He made me promise to save it so I could recreate it for his upcoming birthday with a fruit pie

The custard however, was rather more liquidy then solid and though the flavour is right none of the pictures of it made it through the editing process. So sad! Next time less liquid or more gelatin I guess. It really was tasty though, one of the great things about cooking is that it can still be successful even if it doesn’t look good. Your pie looks beautiful. I had a filling issue as well but after a little chilling it’s fine :) Congrats on your challenge.

It looks beautiful from the outside! Too bad the filling didn’t quite work out, but at least you found a crust you love!

Congratulations!
Maybe try chilling the filling all the way before filling and baking? I did it that way out of necessity, and it came out pretty solid in the end.

It’s interesting the number of people who walked into this one afraid of the pastry and then found the real challenge was in the custard. Photos or not, if it tasted good, you impressed the pie expert, and you’ve got ideas for improving on it, that sounds like a success to me!

It seems like many of the bakers had issues with runny fillings! Your meringue looks fantastic though. I would have never even attempted this!

Thanks Everyone for your well wishes and congratulations. It is too bad that the filling didn’t work but you are right that I have learned enough now to try again and have better results.
