Apple, Coconut and Walnut Muffins Recipe

Back from vacation and I am feeling a little in need of healthy food so I made a batch of hummus for snacking and salad for dinner and now a batch of breakfast muffins. This recipe is based on a basic muffin recipe out of Moosewood Restaurant Cooks At Home. The very first cookbook I ever owned which I received for a present 6 years ago. I haven’t even come close to cooking all the recipes out of here and this is a modified one but everything I have cooked has been wonderful. If you for some reason have lived in a cave and never checked out a moosewood cookbook I highly suggest heading to the library.

(makes 8-12)

2 large eggs
½ cup vegetable oil
1 cup brown sugar
½ teaspoon vanilla
2 medium apples, grated
2 cups flour
1 teaspoon baking powder
½ teaspoon salt
½ cup unsweetened coconut
½ cup walnuts, chopped

Preheat oven to 350F. In a large bowl mix together eggs, oil, sugar, vanilla and apple. In a separate bowl or measuring cup sift (or mix if you are lazy) together flour, salt, baking powder and coconut. Combine wet and dry until just mixed, fold in nuts.

Spoon into muffin cups (makes 8-12) and bake for 25-30 minutes.[/print_this]
