
This is such a keeper I can’t even tell you. I haven’t made falafel at home before (not counting a package) but it is really really easy. Totally a 30 minute meal, and even better it is vegetarian, cheap and healthy. If you pan fy them a little first you get them nice, crispy and browned. I was able to find a bunch of recipes on the web which are very similar but I used this one as a basis.
Serve the falafel in a pita with salad, tzatziki and\or hummus. I like a few peperoncini too.
(makes 10-12 little falafel)

1 400ml can chickpeas, rinsed and drained
3 green onions, trimmed and roughly chopped
1 clove garlic, minced
2 tablespoons flour
1 handful cilantro or parsley
½ teaspoon baking soda
1 teaspoon cumin
1 teaspoon coriander
½ teaspoon salt
pepper
1 tablespoon canola oil
1 tablespoon olive oil
Preheat oven to 350F. Combine all ingredients except oils in food process and pulse and well combined. It should easily form into patties at this point. Grab about 2 tablespoons of the mix and form into a pattie about 1.5″ across and 1/2″ thick. Repeat until the mixture is all used up. Should make about 10-12 patties.
Put oil in a large oven proof skillet and put over medium heat. Fry the patties for about 2 minutes or until crispy and brown. Flip and move the pan to the oven. Bake for 10 minutes, checking to make sure they are crispy on both sides and not burning.
