
I have just discovered KathEats, a fabulous blog which has inspired me to get off my butt and move. I went to the gym yesterday and 2 hours of walking today. In that same theme I threw together this healthy pasta for Presto Pasta with everything which was in my fridge. I have a nice clean slate to start the weekend with. I think since I have the house to myself this weekend (J is away) I may even try and plan the dinners for next week. I love a good solid grocery shop. I also need to eat more vegetarian meals I managed it twice this week not bad at all. Back to Lost.
(serves 4)
1/2 package Whole Wheat linguine
2T olive oil
1/2 medium onion, diced
1/2 red pepper, diced
1 medium carrot, diced
1/2t chili flakes
3 cloves garlic, minced
1 medium zucchini, diced
1 portabello mushroom, diced
1/2C diced extra firm tofu
3 sun-dried tomatoes, diced
salt and pepper
2C prepared tomato sauce (thank you belissima)
1 head of broccoli, broken into florets
Parmesan
Bring a salted pot of water to a boil and add pasta, cook until tender. Meanwhile make the sauce. Over medium heat add olive oil and onion to a large skillet. Toss and saute for 2 minutes then add peppers and carrots and saute anther minute. Add chilis and garlic and mix until fragrant. Add zucchini and mushrooms and saute until soft then add a good dose of salt and pepper, the tofu and the tomato sauce. Put the broccoli in a microwave safe bowl covered with a microwave safe plate and zap on high for 90 seconds. Add to sauce. Taste for seasoning then add the zucchini and pasta. Toss and serve with cheese on the side.
