I am really into a solid breakfast in the morning, especially one which I don’t have to pay for, but it can just be so hard to get organized. With this breakfast casserole I can have an instant and healthy breakfast sandwich in under 5 minutes every morning. Just nuke a wedge in the microwave, place on toasted english muffin and you are good to go. The recipe for this came from a variety of recipes around the web but it is really just an example – anything could go in it. Oh and I realize the sandwich below is a little generous, but it is the most important meal of the day after all, right?
(8×8″ square casserole worth)
2T olive oil
500g lean ground turkey
salt and pepper
1/2 dozen mushrooms, medium dice or quartered of they are small
a dozen eggs
3/4C milk
4 green onions thinly sliced
2 roma tomatoes, cored seeded and diced
1 small package frozen spinach, thawed , drained and chopped
1/2C cheddar cheese shredded
1 8 x 8 baking dish sprayed or buttered
Preheat oven to 350F. In a medium skillet over medium heat add olive oil and the turkey. Stir turkey to break it up and allow it to brown. Add a healthy pinch of salt and pepper. When browned (but undercooked) remove from heat and spread evenly over the baking dish. Add the mushrooms and saute for five minutes, also distribute to baking dish as well as the spinach.
In a medium mixing bowl whisk together eggs and milk. Add green onions, tomatoes and cheese and another good helping of salt and pepper. Pour over the baking dish and give it a little stir.
Bake for about 40 minutes or until set through. If not golden brown on top put under the broiler for a minute or two but watch carefully.

What a good idea. I’m always looking for new ways to prepare eggs and this would be just the thing.
I’m always way hungrier at breakfast than at dinner, so that portion looks just about right!!
Jen – There are so many ways to prepare eggs that I haven’t tried I always just do the same thing too. Maybe one day we will be brave enough to try en meurette.
