Oatmeal Pancake Recipe

I didn’t cook anything except leftover roast beef sandwiches yesterday so no post for Day 6 of my vacation. It is really flying by, sniff sniff now I am going to have to start counting down rather then counting up. I have been reading KathEats and highly enjoying it so I thought I would try her oatmeal pancake recipe for breakfast. Wow are those some filling pancakes! They are good too, although I think some berries would make them even better. Maybe some coconut too? For next time anyways. Off to finish my book and decide what to make for dinner, the grocery store gets its meat delivery on Fridays.
Here is the version I made…
Kath’s Oatmeal Pancakes (makes 1 large pancake)
1/3C oats
1 egg
1/2t baking powder
pinch of cinnamon
1/2t vanilla
1/2 banana, mashed
Mix all ingredients together and let sit while you preheat a grill or skillet to medium heat. Cook like a pancake and top with berries\fruit\maple syrup etc.
Originally started as a way to document and learn to cook, the site chronicles my journey as I learn a few new things, create recipes, and have a disaster or two.
I like the idea of the mashed banana and cinnamon in the pancake and of course the oats would sustain you through the morning.
Do they ever, wow was it hearty.
