This month the Darings Bakers had their first ever vegan challenge and it was a really fun one! The cracker bread was cheap and easy to make and made just enough for two. Plus I had never made crackers before. I covered mine with rows of cumin, salt, and rosemary and they went over really well.
The other part of the challenge included making a dip, spread or salsa to go with it. I decided to make a yummy zucchini and onion salsa my friend showed me a few months ago. It is dead easy and really yummy.
1T olive oil
1/2 small onion, small dice
1 medium zucchini, small dice
salt and pepper
In a medium skillet over medium low heat add olive oil and onion. Cook for 2 minutes, stirring regularly then add the zucchini and a pinch of salt and cook until soft. Remove from heat and season to taste. Cool and serve at room temperature.
