Just a quick recipe this morning that I made this weekend. One more way to make beets, now I have roasted, baked and grilled them and never been disappointed.
Beets, trimmed and scrubbed
Balsamic Vinegar
Fresh Rosemary, chopped
salt and pepper
Aluminum Foil
Slice the beets into ~1cm slices, if they are small just slice them in half. In a strip of aluminum foil place the beets and sprinkle with the salt, pepper, and rosemary. Close up the foil leaving just enough room to pour in the balsamic. Sea up the package. Let marinate for at least 20 minutes. Grill on the BBQ directly (lid down) in the package for about 25 minutes. Remove the beets and grill directly on the grate for 1 minute per side.

Can you believe I have never had a beet? I know! There is something seriously wrong with me. My British husband keeps nagging me to include them in our dinners. I guess after 15 years of marriage I should break down and try. Yours sound fantastic with the use of rosemary.
