If you are in need of an easy cookie recipe, why not try my go-to recipe for oatmeal raisin cookies? They are chewy, sweet and full of healthy oatmeal!
In fact this recipe is easy enough I was even able to guide J through it and his batches have been just as good as mine. Though the cookies won’t last long, they will still be nice and chewy the next day, just store them covered at room temperature.
(makes 30 cookies)
Adapted from Kitchen Parade
½C butter, room temperature
½C white sugar
½C brown sugar, packed
1 egg
1T vanilla
½C all-purpose flour
½C all-purpose whole wheat flour
½ t cinnamon
½t baking soda
½t salt
1¼C oats
½C raisins
½C walnuts
Preheat oven to 350F.
In a mixing bowl, cream the butter and sugar with an electric mixer. Add the egg and vanilla and combine well. In a small bowl or mixing cup add flour, cinnamon, soda and salt and combine. Turn on mixer and gently shake dry ingredients in, don’t overmix. With a spoonula, stir in the oatmeal, walnuts and raisins.
Drop rounded tablespoons onto a parchment lined cookie sheet. Bake for 12 – 15 minutes. Watch them carefully. Let cool for 2 minutes then transfer to a cooling rack.
