Black Eyed Pea Veggie Burgers Recipe

Black Eyed Pea Veggie Burgers RecipeI have been wanting to make veggie burgers for long time and even more so after my successful falafel attempt (10 months, seriously?). I had leftover cooked black eyed peas in the fridge so this seemed like the perfect time. This recipe was inspired by Mark Bittman’s How to Cook Everything Vegetarian as well as some random Googles I made on my way home.

I would make these again in a heartbeat, they were fantastic, especially served with some jalapenos and yam fries. Yum!
Black Eyed Pea Veggie Burgers Recipe

2 cups black eyed peas, soaking liquid reserved.
1/2 cup oats
4 chopped green onions
1 egg
1/2 cup cooked broccoli
1 teaspoon chili powder
salt and pepper
a few splashes Worcestershire

Pulse until combined. Take a look at it and if it is too wet (doesn’t pull away from the sides) add some more oats – I added another 1/4 cup. If it looks too dry (won’t form a ball) try adding a bit of the liquid from the beans, olive oil or water. Form into 4 equal balls and shape into patties. Place on prepared sheet. Bake for 10-15 minutes, flip and bake for another 10. Smother with ketchup and enjoy.

I really like the look of these burgers. I haven’t tried black eyed peas before.

I’ve never made veggie burgers, so this would be the perfect recipe for me to try!

Making these tonight … I have about 5 cups of already made black eyed peas in my freezer that were begging to be used, and since I just got diagnosed with a garlic allergy, these are perfect. Thank you for the recipe! Will let you know how it goes :)

These were supereasy to make. Not too heavy, but tasty.
