This is such an easy thing to make. I am sure it would be even easier if you had an apple corer, but I don’t actually know that. I have made the original version I picked up here once before and it was excellent. However since I was out of both nutmeg and brown sugar (wtf?) I modified a bit and it was equally delicious. It just goes to show how flexible this is.
I picked up a 3lb bag of apples at the farmers market for $5 and this recipe used half of that to make 2 cups worth. It is great on oatmeal, vanilla ice cream or plain.. you know.. if you are recovering from a stomach bug.
(makes 2 cups)
1.5 lbs of apples (or about 8 medium), peeled, cored and roughly chopped
1/2 cup water
1 teaspoon cinnamon
1 tablespoon honey
zest of one orange (organic if you can get it)
Preheat oven to 400F while you prep the apples. Combine it all in a large Dutch oven or casserole. Bake for 45minutes to an hour or until nice and mushy. When you pull it out give it a good whipping\mushing with a wooden spoon or spatula.

Thanks for the recipe. I’m collecting them now to have on hand when my trees are laden this fall. Any type of apple better for making butter or sauce? Also, if one has rosy red apples, will leaving the skin on while cooking down make for a pinkish apple sauce?

I don’t have any good suggestions about kinda of apples. Certainly experimentation there is your best bet.
However I know you don’t want to leave the skin on, it will get extremely tough in the cooking process and and basically inedible.
Apple Sauce – can serve with bread?… look very nice!
