This delicious shrimp, tomato, and feta recipe was suggested by a reader. The combination was so unusual that it struck my fancy immediately and I tried it the very next night. Luckily, this pasta recipe is easy to make so it comes together very quickly. I adapted it from several similar recipes I found around the web and made it my own.
The salty feta is such a great contrast to the sweetness of the shrimp. Tossed with a simple tomato sauce this is a pasta I will most definitely make again.
[print_this]Baked Shrimp, Feta and Tomato Sauce
(serves 1-2)
1 tablespoon olive oil
1/2 small onion, diced
1 clove garlic, crushed
1 small can whole tomatoes
1 tablespoon parsley, minced
8 shrimp, shelled, deveined and peeled
~1/4 cup crumbled feta
2 servings of pasta
Preheat your oven to 400F. Put a pot of water on to boil for the pasta. In a small oven proof skillet sweat the onion in olive oil until translucent. Add garlic and continue cooking for another minute. Roughly chop the tomatoes then add along with their juices and the parsley. Simmer for 15 minutes or until thickened. Stir in prawns and sprinkle the feta on top. Transfer to the oven. Bake until prawns are cooked and feta is melted, it should take about 12 minutes. In the meantime add 2 tablespoons of salt to your water pot and cook your pasta.
Taste the sauce and add salt and pepper as necessary; then toss with the pasta.[/print_this]
