Homemade pasta is like nothing else. Have you made your own pasta yet? If you haven’t you are totally missing out. It is more work for certain but it is an entirely different creature then the packaged stuff. Yes, even the fresh packaged stuff.

I am lucky enough to have access to one of KitchenAid‘s pasta attachments which is a pasta roller and cutter with none of the manual cranking effort. Plus the hidden advantage is that it takes up way less room then a traditional pasta maker. Assuming of course you have the mixer to begin with! Scroll down for a giveaway!

Putting it all together is super simple. I used the base recipe which can be found at the bottom. I would follow the recipe in the book for your first time… but let me show you how easy it is. Or better yet, how about I supervise and photograph while my lovely assistant does all the work? Yes, excellent.

First, throw it all in the mixer with the paddle attachment.

A dough will form.

Cover the dough with saran wrap and let it mellow in the fridge, for say 20 minutes… Get your pasta maker ready!

Give it a few kneads by hand, for good measure. Shall we all admire my lovely assistants watch?

Break it up. The roller is great, but it can’t handle all the dough at once. We divided in four.

Now start feeding it through.

Then gradually run it through on each setting. It will get progressively thinner and thinner.

And voila.

Giveaway Time!

KitchenAid was kind enough to send me an extra attachment and pasta kit to review. Well, I decided to turn around and give it away instead! Here is what this kit contains: All-Metal Pasta Roller, All-Metal Fettuccine Cutter, Pasta Server and Slotted Spoon, Ecco La Pasta Egg Pasta Flour, Ecco La Pasta Spinach Pasta Flour and a Cleaning Brush

Oh yeah, did I forget to mention I made pesto to toss with the noodles? After all the effort of making your own noodles, you want to show them up, not disguise them. Simple sauces are the way to go. I made a beautiful and simple pesto which turned out quite well (we bought almonds at costco be prepared for lots of almonds).

Another favorite of mine is Marcella’s Lemon Cream sauce. Divine.

Almond, Spinach and Cilantro Pesto

1 bunch of cilantro
2 handfuls almonds
1 clove garlic
salt and pepper
3 handfuls raw baby spinach
1 tablespoon grated parmesan
olive oil and water as desired

Basic Egg Noodle Pasta

4 large eggs
1 tablespoon water
3 cups sifted all-purpose flour

I have been eyeing the KA pasta rollers/cutters for a long time, but I haven’t taken the plunge. I’d love to win this! I am a big fan of homemade pesto with lots of sauteed veggies and chicken. I also made a fabulous baked shrimp in tomato sauce and feta that would be excellent over some homemade pasta.

Favorite pasta dish at a restaurant – butternut ravioli with brown butter and sage.

Favorite at home – buccatini with garbanzo beans, tomatoes, broccoli, garlic and goat cheese or a simple spaghetti with olive oil, lemon juice and a LOT of parmesan!

We love fettucine or linguini noodles with different sauces. The lemon creme sauce you gave the recipe for sounds delicious. I make a pretty mean seafood fettucine I experimented with after enjoying at a restaurant years ago. Thanks. Would love to be the recipient of your prize– it goes w/o saying. I have two favorite pasta dishes.

The first is a seafood alfredo that I make when I’m ‘tired’ of the spaghetti and meatsauce my husband likes to have weekly.

The second is the most amazing vegetarian lasagna I have ever tried. No tomatoes or cottage cheese. It’s got peppers, carrots, mushrooms and spinach mixed in a cheesy white sauce layered between the noodles. I wasn’t sure when I first made it, but it is my go-to vegetarian dish 90% of the time.

I’ve never had a pasta dish I didn’t like! I would be hard pressed to choose between a good meaty and cheesy lasagna or linguine with alfredo sauce, broccoli, and chicken.

I’ve never made homemade pasta. For the first time, I made my own pasta sauce (sort of). I doubled the recipe for potstickers. It had scallions, red peppers, ground meatloaf mixture, and some other things. I chopped up the extra veggies, opened a jar of generic sauce, and threw the extra meat/veggie mixture into the sauce. It was the first and best sauce I have ever made. So, I would have to say that is my favorite pasta dish! Homemade pasta would make it so much better.

Pumpkin ravioli with sage and brown butter is one of my faves. I also like orichette with white beans, sage, and garlic. Pesto ravioli in gorgonzola cream sauce with toasted pine nuts. Really, I am a carb fiend, there aren’t many kinds of pasta I don’t love. I will stop with those three.

I’ve never tried making my own homemade pasta, but I’ve had it and it’s so much better than store bought. My favorite past dish is a vegetarian lassanga with lots of cheese and roared veggies.

There’s a local restaurant here in my hometown that makes a lemon flavored pasta and pairs it w/ artichokes, tomatoes, capers, and white beans. It’s amazingly good. That’s my first experience w/ homemade pasta and makes me want to learn to make my own. I’ve investigated getting a pasta maker, but that’s as far as I’ve gone so far. This would help.

Ohh…so many good ones…I’d have to say probably my favorite pasta dish would be with sausage, kale or any other green (preferably not spinach as it goes too limp) lightly steamed, white(including garbanzo) or red beans, garlic, onions, crushed red pepper, parmesan and diced tomatoes. Not really a recipe but it’s one that we always seem to go back to at my house. Usually we use an orrichette pasta but I have made it with any number of other pastas depending on what I have on hand and it’s always delicious :)

Ooo my favorite pasta dish is easy and tasty however, I don’t get to make it often as my son doesn’t like it and the youngest is too young to eat it… It’s linguine with spinach (or other green)in a yogurt cream sauce… Sometimes I add a little chicken depends on my mood… weeshenanigans(at)gmail(dot)com

My very favorite pasta dish is linguine with white clam sauce, especially when made with the freshest clams, fresh garlic, fresh herbs, good olive oil, and white wine. Some of my favorite dishes are gnocci pomodoro, home made tagataille with tomato sauce or pesto, or lemon sauce, spinach ravioli…pretty much anything! Woohoo!
