Super Cookie Recipe
I have been hearing amazing things about a recipe for Supercharge Me Cookies from Eat Drink Live & Be Vegan. Unfortunately I couldn’t find the recipe anywhere on the web and the book is currently on hold at the library. So, I set out to make my own version. I really liked the idea of the nut butter, coconut and dried cranberries people were talking about so here goes.

The recipe, as far as experiments go turned out really well, they are very yummy and super filling and high fiber. One thing to caution is that the batter itself isn’t very sweet at all. Without the cranberries and raisins they would definitely not be sweet enough but together super good. These are also amazing dipped in almond butter.

I think this recipe may need testing so use at your own risk! I used a mixer to combine everything and the combination of maple syrup and honey was me trying to use up some maple syrup.

These look like a tasty treat to take to work for those mid morning and afternoon munchies..you know when you feel like popping down to Starbucks for a muffin or something??? I have all of the ingredients as well..thanks!

Totally know how you feel. I keep yogourt, granola bars, larabars in my work drawer to try and avoid it! I really don’t like Starbucks goodies enough to make it worth it.
