Sometimes all you want is a simple piece of grilled chicken on a summer day. Well this is it, it uses up what you have in the garden as far as herbs go and is delicious hot off the grill or cold and served on a salad. My friend S made this for me a few weeks ago using chicken thighs and I quickly got the details. I tried it again with chicken breasts last week and it was just as good. Well, actually, S’s was better since I prefer thighs, but that’s just me. I am going to have to make another batch of this, once again my herbs are out of control! What are your favorite simple grilled chicken recipes like?
(serves 2)
a good handful of fresh herbs (I used parsley, sage, oregano also nice are green onion and cilantro), minced
salt and pepper
lemon juice
lemon zest
Dijon mustard
olive oil
4 boneless skinless chicken thighs or 2 boneless skinless chicken breasts
Combine all ingredients above and marinate for 6-24 hours. Grill until cooked through but still juicy.

I love to find new ways to marinate grilled chicken. This one looks so fresh!
In the summer, I want everything grilled or just fresh (who wants to be stuck in a hot kitchen?). This looks perfect.
Kat, I use a similar marinade for chicken. It's simple but it works…why mess with something that works?

I've been doing a lot of grilled chicken with herbs fresh from the garden, too. I keep the skin on and stuff the herbs under the skin with a slice of lemon. If you don't want the added fat, just remove the skin after cooking. This method imparts the flavour if you don't have time to marinate.

Sometimes I like to use a yoghurt based marinade, grinding up some garlic and ginger, adding some ground paprika, curry powder, pepper and a little dried chilli flakes if I'm feeling like some more punch. I then add a good few dollops of natural yoghurt, mixing well and then marinating my chicken pieces in it for a couple of hours before grilling, or sometimes adding a layer of panko and roasting in the oven. Yum!
