Sorry if you are sick of them already, but since I just discovered them I am enamored. Plus I have been gifted with a huge bounty of them from J’s Dads garden. Waste not want not right?

Baked Eggplant with Feta and Tomatillo Salsa RecipeFor this recipe I used my roasted tomatillo salsa and along with feta, baked it on eggplants. It was inspired by a recipe in the Joy of Cooking which used tomatoes and oregano. I actually made two versions, one with tomatoes and one with the tomatillo salsa, the one with the salsa was by far my favorite and I would definitely make this again. In fact I ate two whole eggplants worth myself, it was that good!

  8. Stuffed vegetables are where it's at…and this looks delicious! And relatively easy which is nice! Thanks for sharing…I'll be making this tonight. Hey one question…do you think this would be good with any other cheese than feta? I'm just not a huge feta person…

  9. I like goat cheese? Also, it would be fitting to do something more mexican style like a queso fresco or a monterary jack maybe? Just watch whatever cheese you use you may want to cover it first as you may get different behaviour.
