Baba Ganoush Recipe

Middle Eastern cuisine has so many healthy recipes to choose from. Meats aside, all the recipes which come to mind are heavy on lentils and beans, fresh herbs, and ancient grains – perfect if you are looking for delicious and wholesome food.
Baba Ghanoush (2 of 2)
Baba Ganoush or Baba Ghanoush is just one specific variety of what must be hundreds of different dips based around the flesh of roasted eggplant. This middle eastern recipe, popular in Egypt, is super simple. Roast or grill the eggplant over a flame if you have it, but the oven will do just fine, then you mash in fresh lemon juice, parsley, minced garlic, olive oil and salt and pepper to get a delicious and healthy dip or side to a fabulous meal of falafel, hummus, tabouli and pita. This dish is best made in the summer when the weather is hot and the eggplant is delicious and local. But screw that, sometimes a girl has a craving.

  1. Ohhh! Yum! I had the best Baba Ganoush in NYC, tried to replicate it when I got home and it wasn’t quite the same.

    Will give this a go at some point, though I am thinking spring so I can BBQ the eggplant! Spring is around the corner right?!

    Oh reminds me of a question…my “new” thing has been to fine grate the garlic instead of mincing…do you think there will be a diff?

  2. Nope, I also use my microplane for garlic if I am getting it dirty anyways, just make SURE you remove the germ first regardless. (i.e. the little, sometimes green root inside)

  3. Wow….eggplant in a dip! That looks very delicious. I would love to try that. I always deep fry it and then make a spicy sauce to it. We eat that with rice.

  4. I love middle eastern food. Baba Ganoush is one of my favorites along with some freshly baked pita bread. This recipe sounds delicious!

  5. My boyfriend will now love me forever and ever thanks to this great post! I’m serious, the kid put Hummus and Baba Ganoush on everything! Pizza, pasta, apples… u name it! I know some of that sounds gross. LOL
