The salty feta and spinach is balanced well with the strong flavours of the salmon and the freshness of the lemon. J actually makes a chicken with spinach and feta cheese which is very similar and was currently in the works to be published so expect that soon too. Besides the obvious spanakopita, really, spinach and feta goes with everything, I especially love it in pasta and omelettes.

  4. i had salmon and spinach over the weekend. i tried spinach for the first time and i really didn’t like it. but i wanted to soooo bad! maybe i should season it with more than just salt?

    Peter – I have done versions which actually use some of the brine to make more of a sauce, less healthy though.

    Karyn – you *just* tried spinach?!!!! Wow. I would say try spanakopita or spinach pie. That will make anyone a lover of spinach. Seasoning with more than salt helps too. I like it with peanut sauce?
