This is a recipe from my archives as I am currently traveling. Dandelion greens are now in season and are a delicious and affordable alternative for your salads. – Katerina
Dandelion greens are a leafy green perfect for a salad. Slightly more bitter than arugula, they are delicious when paired with something sweet like grilled pear. They are actually easy to harvest yourself and have a fabulous nutritional profile. If you do want to pick them yourself, just make sure to pick the ones that haven’t gone to flower yet or they will be too bitter to eat raw.
(serves 3-4)
2 medium ripe pears
1/2 lemon
freshly ground pepper
1/2 log goat cheese
1 bunch dandelion greens, washed and torn into bite sized pieces
3 tablespoons balsamic vinegar
Cut pears into thick 1/2″ slices. Toss with a squeeze of lemon and some fresh pepper. Grill for a few minutes on each side, until nice char marks form and they start smelling like burnt marshmallows. Remove to a cutting board and allow to cool.
Slice pear and discard the core. Put greens and pears into a salad bowl. Crumble goat cheese on top with some more fresh pepper. When ready to serve finish the salad with the balsamic vinegar and remaining lemon juice.

A favourite of mine is arugula with grilled pears, toasted walnuts and blue cheese. Yes, I noticed that dandelion greens are all the rage these days. I suppose I can stop killing them in my garden…

I have some goat cheese in my fridge that I need to use! And I didn't like pears as a child, either, but love them now.
I like to put pansy flowers in my salads- it certainly adds a nice touch of color, and this salad sounds like a perfect match for them!
