People either love dark beers like stout, or hate them. Either way, inevitably you will end up with a bottle or can in your fridge eventually — why not use it to make some juicy grilled chicken?
This chicken recipe takes 5 minutes to prep and results in super moist chicken thighs, even without cooking them on the bone. Feel free to use flat beer, it will be just as good.
Although this particular recipe is made with chicken thighs, marinating chicken breasts in beer also works well to produce juicy chicken breasts. There is also this delicious recipe for Beer and Ginger Barbecue Sauce which is made with stout, and perfect on ribs.
[print_this]Spicy Stout Grilled Chicken Thighs Recipe
(serves 3)
6 boneless, skinless chicken thighs
1/2 teaspoon coarsely ground black pepper
1 teaspoon salt
3 tablespoons sambal oelek
1 1/2 cups stout such as Guinness
Put thighs in a marinating container. Sprinkle with the salt and pepper and cover in sambal oelek. Rub all over the chicken to penetrate with the spices. Pour beer over top until the chicken is covered and give it a little stir. Cover and marinate for at least an hour.
Heat and oil your grill. Discard marinade and put chicken on hot grill. Sear on both sides then turn the heat down and close the lid. Cook until chicken is done but still nice and juicy. Serve immediately.[/print_this]

I’ve cooked with guinness before and somehow ended up with a six pack sitting in my kitchen. Seeing as how I absolutely CANNOT drink the stuff straight, this is the perfect solution to get rid of it! That chicken looks super delicious.
Nice idea with the stout (which I do like). You could apply these flavours and do beer-can chicken as well!
Never have I though of marinading th chicken in stout! Clever idea to use the up the beer when making beer can chicken!

Nina\Peter – I don’t due beer can chicken. I am always worried about the dyes on the can getting into my food – I am sure it would work well though.
