As someone who can eat a tomato like an apple it is very rare to have a red and perky tomato go to waste.
However, sometimes one is lucky enough to be given more tomatoes that are consumable in the time allotted. If you have a surplus of tomatoes, or just want to try something different I suggest you try oven roasting your tomatoes.
By slowly roasting the tomatoes in the oven, not only is the flavour enhanced and concentrated, they also freeze well and are great to use in pastas, soups and sauces.
Halve all the tomatoes, season gently,toss with a tiny bit of olive oil if desired and place them in a low 300F oven for an hour or two. If you oven is low enough it requires very little attention.

I can’t quite eat a tomato like an apple, but I like this!
I love this idea. So simple!
I also find that roasting tomatoes with red peppers mixed in is very tasty, both flavors compliment each other.
