Recipes to Cook Your Way into Spring

Now that Spring is officially here, we can start celebrating some of the wonderful seasonal fruit and vegetables in the markets like leeks, asparagus, fennel, artichokes, and rhubarb. Here are just a few recipe ideas to feel inspired this Spring. (Click on the images for the recipes!)

Asparagus is one of my all time favorite vegetables, even though I can buy it year round I look forward to Spring for the fully flavoured, inexpensive local asparagus. You know, so I can roast it…

My favorite seasonal dishes are roasted asparagus, artichokes, balsamic baby carrots (not those nubbed ones for the grocery store, but fresh from my garden), roasted ears of corn slathered with sour cream and chili spices. Yum!
