Try this baked Camembert appetizer the next time you have people over. The contrast of sweet and salty will please your guests and you can revel in just how easy it is. (Feel free to prepare the apple topping ahead of time).
For you thriftier readers, you should know that this recipe is not the time to find your best imported Camembert as some of the flavour is lost when heated. Try buying something in the low end of French cheeses and I think you will be happy with the results, you can also substitute Brie cheese.
Baked Camembert with Apples, Rosemary and Honey(serves 4 - 6)
Preheat oven to 350F. Prep the apple and rosemary if you haven't already. Carefully slice the top off of the cheese, you need to take just enough to expose the flesh inside. Gently surround the cheese with aluminum foil without covering the top and put on a baking safe sheet.
Heat a small skillet to medium heat. Add the olive oil, and swirl around the pan. Toss in the apples, rosemary and salt and sauté for 3 minutes. Push the apples to the outside and add the honey in the middle, when it starts to melt and bubble stir to combine with the apples. Sprinkle with salt and pepper. Remove from the heat and spoon over the camembert.
Transfer the cheese to the oven and bake for 20 minutes. Remove from the foil and serve with crackers and fresh baguette.
