Healthy Banana Chocolate Chip Muffin Recipe

I have been seriously craving baked goods for the last few weeks. Like, as soon as I am about to run out I must bake more! I have made three batches of muffins in 10 days, I have also made two more batches of the oatmeal raisin cookies. I just can’t stop! Of course I am trying to choose healthier options to bake. I am still trying to eat healthier. more whole foods, and this is evidenced here with whole grain flour, olive oil and flax. These turned out great and are a good solution for a sweet craving

Banana Chocolate Chip Muffins

(12 muffins)
Adapted from Handmade Therapy

2 cups whole wheat flour
1/2 cup ground flax seeds
3 teaspoons baking powder
1 teaspoon salt
3 large egg whites, lightly beaten
3/4 cup plain yoghourt
1 cup milk
4 tablespoons olive oil 3
bananas, mashed
1/2 cup chocolate chips
1/2 cup walnut pieces

Preheat oven to 375F. Combine flour, flax, baking powder, salt, chocolate chips and walnuts. in a large bowl and set aside. In a smaller bowl whisk together the egg whites and yoghourt. Add in milk, then olive oil and bananas. Combine wet mixture with the dry and stir just until combined. Scoop into well greased muffin tins. Bake for approximately 25-35 minutes.
