Tostadas are like little Mexican pizzas, messy, fun to eat, and endlessly adaptable. This beef tostada recipe is all about the marinade on the flank steak. To celebrate the season of citrus, mix together this spicy orange and chipotle sauce — would be great on chicken too.
If you actually look at the calorie count of this recipe you will be pleasantly surprised, compared to pizza this is actually quite healthy — especially if you avoid frying the tortillas. Plus, if you have leftovers you can make a killer taco salad.
Beef Tostadas with Fresh Orange and Chipotle Marinade
(6 tostadas)Zest & juice the orange. Combine with the chipotle pepper, brown sugar, olive oil and a big pinch of salt and pepper. Add flank steak to the marinade and let sit at room temperature for one hour to marinate.
Heat your grill to high and turn your oven on to 400F. Put a cooling rack on top of a baking sheet and line it with your tortillas. Spray each side with oil and bake for approximately ten minutes or until crisp and just starting to brown. Flip halfway through.
Meanwhile grill your steak, to medium rare. While you are grilling dump the marinade on to the steak as you flip it. Covet loosely with foil and allow to cool for 8 minutes. Slice against the grain.
Form the tostadas by starting with refried beans and sour cream. Then layer on your lettuce and meat followed by tomatoes, onions, cheese and cilantro. Douse with hot sauce and jalapenos if desired. Eat warm.
