I have been wanting to make veggie burgers for long time and even more so after my successful falafel attempt (10 months, seriously?). I had leftover cooked black eyed peas in the fridge so this seemed like the perfect time. This recipe was inspired by Mark Bittman’s How to Cook Everything Vegetarian as well as some random Googles I made on my way home.
Black Eyed Pea Veggie Burgers(4 patties)
Adapted from How to Cook Everything Vegetarian
Turn on your oven to 425F. Line a cookie sheet with parchment and spray with cooking spray. In a food processor combine all ingredients.
Pulse until combined. Take a look at it and if it is too wet (doesn’t pull away from the sides) add some more oats – I added another 1/4 cup. If it looks too dry (won’t form a ball) try adding a bit of the liquid from the beans, olive oil or water. Form into 4 equal balls and shape into patties. Place on prepared sheet. Bake for 10-15 minutes, flip and bake for another 10. Smother with ketchup and enjoy.
