Brussels Sprouts with Bacon & Walnuts

Brussels Sprouts with Bacon, Walnuts and Balsamic

I have made Brussels Sprouts with bacon before and really liked it. But this time I wanted to roast the Brussels to give them that extra flavour and crispy texture I love. Brussels sprouts and bacon are natural friends and adding the walnuts gives this dish a nice crunchy texture contrast.  This would be a happy addition to any Thanksgiving table, plus don’t we all love recipes that only dirty one pan?

Brussels Sprout Bacon

Brussels Sprouts with Bacon, Walnuts and Balsamic Vinegar

(serves 2-4)

50 grams of bacon, diced
1/2 cup walnut halves
4 cups Brussels sprouts
salt and pepper
1 tablespoon white balsamic vinegar

Preheat oven to 400F. Trim the Brussels sprouts ends off and cut any large ones in half. Heat a large oven proof skillet to medium. Add bacon and walnuts and saute until bacon is crispy. Remove bacon and walnuts to a dish and add sprouts as well as a few grinds of salt and pepper. Put pan in the oven for 20-30 minutes depending on size of sprouts. Toss half way through. Remove from oven, toss with bacon and walnuts and put back in oven and roast for 10 more minutes. Drizzle with balsamic, toss and serve.

I love Brussels sprouts with bacon…and walnuts would add a great crunch! I also like the idea of using white balsamic vinegar–I've used the dark kind before and while it adds good flavor it always colors the sprouts and turns them kind of murky. This is a much better idea.

Absolutely love brussels sprouts! I know it is a love it or hate it vegetable but, this recipe is a great way to introduce folks to this very versatile vegetable.

Funny, I usually don't touch Brussels sprouts, but tried them this fall and didn't mind them. Roasting sounds like a great way to bring out the flavour. And if you've got walnuts and balsamic in the recipe? I'm there!

I've done roasted brussels sprouts with balsamic vinegar and enjoyed it. Adding the bacon would make it even better! :)

Georgia – I would love to know if it works. Maybe I should try it on my Brussels hating friends?

Charmian – I understand it is an acquired taste. I LOVE them roasted though, definitely the way to go as far as I am concerned.

I, just last night, roasted brussels sprouts! SO GOOD!!

(Must have been a mental block from somewhere in the horrible-veggies-as-a-child thing!)

I will definitely be adding some walnuts and other goodies to them from now on. Thanks for the inspiration!

I grew up with parents who thought all vegetables should be grey before being eaten . . . luckily I tried brussel sprouts when they were green! Brussels, bacon, walnuts AND chestnuts . . . go ahead, give them a try–Delicious!

I found your blog while Googling “Brussel sprouts with bacon” because my hubby’s twin brother is visiting from Australia and listed bacon as his number one thing to eat a lot of while in Canada because they only have peameal in AU, and because mother-in-law charged me with bringing the Brussel sprouts for Christmas dinner today. So I’m about to commit 5lbs of sprouts and 1lb of bacon to this recipe in hopes of not grossing 11 people out. I’ll report back LOL

Well, they were a hit! Although I must be honest: I forgot the balsamic vinegar. I cut my sprouts in half because they were enormous! Also, I only ended up adding about half a cup of small walnut pieces because that’s all I had in the pantry. Otherwise I followed the temperature and cook times exactly.

My husband was in charge of cooking the bacon and he cooked all the bacon we had – about a pound and a half! I’d only intended to use the one pound so the sprouts were heavy on the bacon but as it turns out, that’s what most people loved about them! Not many people noticed the nuts but when I mentioned it to them they said “Oh yeah I thought they were crunchy! Neat!”

So basically, I roasted the sprouts in a lot of bacon haha. They were really delicious. Thanks for the recipe.
