Try this easy cabbage chowder recipe the next time you feel like hibernating and eating comfort food. The bacon will satisfy but the low calorie footprint will make it guilt-free!
Cabbage and Bacon Chowder
(serves 4)Wash and chop all your ingredients. Place the bacon in a soup pot and turn the heat on to medium low. Allow the fat to render and the bacon to crisp, stirring occasionally (about 10 minutes). Remove the bacon to a paper towel with a slotted spoon.
Add the onion, carrot and celery to the pot along with a pinch of salt and pepper. Cook until onion is translucent, stirring regularly. Add cabbage and cover for 3 minutes or until wilted by half. Add the remaining ingredients to the pot and bring to a simmer. Simmer for 45 minutes or until the potatoes are softened.
Remove the bay leaf and the thyme. Transfer 1/2 of the soup to a blender allow to cool until no longer steaming and blend until smooth. Transfer back to the pot, add the bacon and season to taste. Bring back to a simmer and serve hot.
