Caesar Salad Dressing Recipe

Caesar salad should be bad for you. It should be full of rich ingredients like egg yolks, oil, cheese and crunchy croutons. Your breath should be fiery from the garlic and anchovies. When done well the dressing should be the star of the show and not some gloppy mess that came from a bottle. If you have health concerns you can coddle your egg first (Boil for 1 minute).

Caesar Salad Dressing

(serves 4)

1/2 clove of garlic, minced
2 anchovies, minced
1 egg yolk
1/2 lemon, juiced
3 teaspoons olive oil
dash of Worcestershire
dash of Tabasco
salt and pepper

Separate the egg yolk from the white and add the yolk into a bowl. Whisk. Add lemon juice while continuously whisking. Add garlic, anchovies, salt and pepper, Worcestershire and Tabasco. Slowly add oil whisking continuously to emulsify.

Toss the dressing with romaine lettuce, grated Parmesan and homemade croutons.
