Carrot and Ginger Soup Recipe

Have you ever made a carrot soup? Personally, before I made a simple carrot soup for the first time I absolutely underestimated how delicious it could be. The flavour of carrots is so delicate when transformed into soups, and is complemented by infinite amounts of flavour combinations.

Carrot, Apple and Ginger Soup Recipe

(serves 2-4)

2 tablespoons olive oil
1/2 onion, diced
2 large carrots, peeled and diced (about 2 cups)
2 small apples, peeled and diced
1 teaspoon minced ginger
2 tablespoons flour

Put a heavy saucepan on to medium low heat and sweat the onions until nicely translucent. Add the carrots, ginger and apples along with a big pinch of salt and a grinding of pepper. Continue sweating, stirring regularly for 10 minutes. This will really help develop that flavour.

If there is no oil visible in the pot, add another tablespoon first then sprinkle the flour on top and stir. Stir regularly until the whiteness of the flor is no longer visible. Cover with cold water and bring the mixture to a simmer.

Simmer until the carrots and apple are very tender. At least 20 minutes. Remove from heat and allow to cool slightly, then puree in a blender or use an immersion blender. Add salt and pepper to taste. You don’t want the soup really thick, if you have really simmered it you may need to add more water to get it back to a real soup consistency.[
