Nutmeg, Cinnamon and allspice along with the carrots turn these boring muffins into something a bit more exciting and reminiscent of carrot cake. Top with cream cheese for an easy on the go breakfast.
Carrot Cake Bran Muffins(12 muffins)
1. Preheat oven to 350F.
2. Combine dry ingredients in a large bowl and stir together: flour, bran, baking soda, salt, cinnamon, nutmeg, allspice, raisins, walnuts and carrots.
3. In a separate bowl whisk together the eggs and the sugar. Whisk in the yogourt, milk, oil and vanilla.
4. Fold the dry ingredients into the wet until just combined. Don't over mix.
5. Spoon into muffin cups and bake for 25 minutes.
