This recipe took three tries to get perfect, but all my tests were worth it. When you make these cookies you will end up with perfect coconut macaroons that form light little haystacks. They hold their shape and aren’t sickly sweet.
When you read the recipe you may think – is this it? Is it really this easy to make coconut macaroon cookies? It really is, they are so quick to make I recommend not to start mixing until your oven is actually hot.
Coconut Macaroons Recipe
(~25 small cookies)Preheat oven to 350F. In a large bowl or mixer whisk together the egg whites, sugar, vanilla and almond extract. Fold in the flour and coconut. Drop by heaping tablespoons onto parchment lined cookie trays.
Bake for 17 minutes rotating your trays part way through cooking so they cook evenly.

i love that i have a friend who is willing to bake with me. and i’m loving that you’re giving us the material to use! i haven’t had coconut macaroons in quite awhile. i keep forgetting how good coconut is
