Early Grey Cupcake Recipe

These cupcakes are sweet, citrusy and special. In fact, I made these for myself for my own birthday. Don’t forget that it is important to shower yourself with affection sometimes too. Especially affection of the sugary variety.

Earl Grey Cupcake Recipe

The Earl grey is a really fun flavour and infusing tea in recipes is easy once you know how. Two different methods are used to bring tea into this recipe: steeped milk has a delicate flavour which is lovely in the cake itself, while tea leaves are used directly in the icing for a stronger aroma.

Earl Grey Cupcakes

(a dozen)

cupcakes:
1 cup milk
1 earl grey teabag
2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
zest of one lemon
2 eggs
1/2 cup softened butter
3/4 teaspoon vanilla
Icing:
3/4 cup softened butter
1 earl grey teabag
1/2 teaspoon vanilla
4 1/2 cups icing sugar
1/2 cup whole milk

Place the milk in a small saucepan and heat until it bubbles, stirring so it doesn't burn. Pour over the teabag at allow to steep for at least 30 minutes, and then allow milk to cometo room temperature. Discard the teabag and measure out milk until you have 3/4 cups.

Preheat oven to 375F. Line a 12 muffin tray with papers. In a large bowl whisk together the flour, sugar, baking powder, salt and lemon. In a separate bowl beat together the eggs, butter, milk and vanilla. Fold the dry into the wet until combined. Divide between the 12 muffin tins and bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool completely before icing.

To make the icing place the softened butter in a bowl. Cut open the teabag and pour the tea leaves onto the butter. Beat with a mixer until nice and fluffy, beat in the vanilla and then start beating in the icing sugar and milk, alternating a bit of each at a time.

Ice the cupcakes and store in the fridge until you are ready to eat.

Yum, I love Earl Grey cupcakes! I stumbled across a recipe a month ago and have made them a few times since, I love that they’re such a unique flavour. Will have to give your recipe a try :)
