Craving noodles? Try this recipe for stir-fried chicken and veggies with a Korean inspired sauce. Use whatever noodles you have on hand or desire – you could even make them crispy in a chow mein- style.
Korean Inspired Chicken Noodles
(serves 2)
1. Cook the stir fry noodles according to package directions (i.e. boil them and cool them quickly , and run under cold water to stop the cooking). Set aside. You want them to cook briefly and be simply warmed up in the sauce.
2. Combine the soy, sesame, vinegar, hot sauce, ginger and garlic into a small bowl.
3. Heat a wok to high heat. Add the oil and once smoking add the chicken thigh meat. Stir chicken until browned on all sides. Add the sauce combination and stir until just cooked. Remove from wok and set aside.
4. Add the vegetables , one by one in order of longest cooking time, ending with the green onions. Stir fry patiently until just tender. Return the chicken, sauce and noodles to the wok and toss. Serve hot.
