On the first day of spring, I believe it is time to start grilling. And what could be a more healthy and fun treat than grilled pineapple?
The cinnamon makes this grilled pineapple recipe genuinely spicy and the lime cuts the sweetness just slightly. Cutting the pineapple lengthwise makes it easy to cut out the core. If you are going for a fancier preparation feel free to grill pineapple rings. Try this warm, served with vanilla ice cream.
Grilled Pineapple Recipe with Lime Cinnamon
(serves 2)Remove the skin from the pineapple and cut into quarters lengthwise. Remove the core. In a big ziploc or marinating container stir together sugar and cinnamon. Add pineapple and marinate for up to 30 minutes or more.
Cook pineapple on a hot grill until you have grill marks on each side. Remove and toss with lime juice. Best if served hot and topped with ice cream.

I love grilled pineapple and serving it with vanilla ice cream sounds good! I like to finish mine off with a sprinkle of toasted shredded coconut.
This so makes me wish I could eat pineapple (damn you weird stomach acid hypersensitivity that only reacts to pineapples). seriously delicious.

I love the grilled pineapple at Brazilian churascaria restaurants. It’s such a nice companion to steaks and such. Fish, too. I guess anything really, heh.
