Ooey Gooey Midnight Brownies

This brownie recipe emerged from a debilitating chocolate craving. Though these brownies do not involve any special ingredients, this is the sort of recipe I imagine college students making at 2am.

They are gooey, they are ultra chocolatey and the marshmallow melts into pockets of sweet crystallized sugar. You should also be proud to hear that because I take quality control so seriously, I made sure to check every inch of that brownie pan when photographing them the next morning. I left no crumb uneaten.

Ooey Gooey Midnight Brownies

(16 brownies)

2/3 cup butter
1 cup sugar
1 cup cocoa
4 eggs
1 teaspoon vanilla
1 1/2 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup chopped marshmallows
1 cup chocolate chips

Preheat oven to 375F. Grease an 8x8 pan. In a medium sauce pan melt the butter on medium low heat. Remove from heat and stir in sugar and cocoa. Beat in the eggs and set aside. In a large bowl whisk together flour, salt and baking powder. Fold the dry into the wet mixture. Follow in marshmallows and chocolate chips. Pour into greased pan.

Bake for 30 minutes and allow to rest for at least 5 minutes before cutting. These are better the next day.

why is it that you put marchmallows in them ?
do you taste them ? or it more of a chocolately taste from all the coco ?

The marshmellows melt and sort of caramelize? You have these little pockets of sugar throughout the brownies.
