Stonefruit season is almost over but I still have all of this local fruit to use, which admittedly isn’t at it’s best. Now is the perfect time to start baking with those peaches and plums.
Try this crisp recipe which adds apples to improve the texture and coconut for that secret ingredient of spice.
Plum, Peach, Coconut and Apple Crisp(serves 6-8)
1. Preheat oven to 350F.
2. Pit the plums and peaches and cut into large chunks. Place fruit in a large bowl. Peel and core the apple, also chop into large chunks and toss with the plums, peaches and coconut. Pour into a large baking dish.
3. Combine the oats, brown sugar, flour and salt in the bowl. Cut the butter into pea-sized cubes and toss with the dry ingredients. Use your hands to very quickly rub the butter into the dry ingredients until you get it to a thick sandy texture. Pour over the fruit.
4. Place in the oven and bake for 80-90 minutes or until browned and bubbly.
