Somedays, don’t you just love to buck the rules and throw together a really easy dish? This blueberry and peach cobbler recipe is especially satisfying when you know that it takes less than 10 minutes to create and only dirties one bowl.
Don’t peel the peaches, skip fussing with pastry, and if you are thinking about making a lattice top you may as well stop reading now. Even better, it makes exactly two portions and is very figure friendly.
Quick Peach and Blueberry Cobbler for Two
(serves 2)
Turn your oven on to 375F. In a small bowl combine the peaches, blueberries, white sugar, corn starch and a tiny pinch of salt. Mix well. Divide between two small ramekins. In the same bowl, use a wooden spoon to cream together the butter and brown sugar. Once combined slowly work in the flour. Using your hands divide the mixture in two. Grab small handfuls and press them so they will stick together, then crumble them over top of the fruit.
Bake for 30 minutes, or until golden and bubbly. Allow to cool for at least 10 minutes before eating.
