I make cobblers rather than crisps on days when I really feel like dessert, but am lazy enough to expect it with little effort on my part. Plus, there is something really satisfying about the fluffy cake bits you get in a cobbler paired with the healthy fruit filling.
If you are feeling really indulgent try topping with some whipped cream. Tip: Be careful not to overmix the batter or it will be chewy rather than light.
Rhubarb, Ginger and Apple Cobbler
(serves 6-8)
1. Preheat oven to 375F.
2. In a medium bowl combine the flour, baking powder, salt and sugar. Cut butter into small pieces and incorporate into flour until it is pea-sized. Pour in milk, stir to combine and then let rest. Allow to rest while you prepare the filling.
3. Wash and trim the rhubarb and chop into 1/2" pieces. Place in a large bowl. Peel and chop the apples and add to the rhubarb along with the brown sugar, ginger and remaining flour.
4. Pour the fruit into a buttered dish. Spoon the batter on top haphazardly.
5. Bake for 45 minutes to an hour or until top is browned and a toothpick comes out clean.
