Sausage and Cheddar Bites Recipe

by katerina on December 23, 2009

These easy little holiday appetizers are very popular under the title Bisquick Sausage Balls. I was on twitter last week when Katie Lee Joel twittered about them being a favorite of hers and I thought they would be a great quick fix. I find it so easy to make sweets at the holidays, but am sometimes stumped for savory ideas, especially speedy ones.

Sausage and Cheddar Bites Recipe

I couldn’t actually find Bisquick in the store, maybe it is an American thing? I bought biscuit mix and used that which seemed to work fine. They certainly do come together very fast. Overall these went over okay, but I am not sure I would make them again. They were fine but a bit greasy. If you have a sausage lover in your house I am sure this will please. However, if you don’t tolerate spice well try using sweet sausage rather then hot.

Sausage and Cheddar Bites

(30 bites)

1 lb italian sausage, hot or sweet
2 cups bisquick or biscuit mix
250g shredded cheddar cheese
1 tablespoon cream, optional

Preheat oven to 350F.  Remove casing from sausages and add meat to a bowl. Combine with mix and cheese and use your hands to combine thoroughly.   Roll into balls just smaller then a golf ball and place on a baking sheet.  Brush with the cream, this will help them to brown. Bake for 20-25 minutes or until sausage is cooked through. Serve hot.  (You can refrigerate them cooked and then reheat later.)

Bisquick is DEFINITELY an American thing. And one that I sometimes wish to forget.

This sounds delicious though! Sausage and cheese is delicious together.

I'll have to try these – I tried something similar before, but they were really dry. Must have been a bad recipe!

I make the same thing using spicy Italian sausage and a couple shots of Jim Beam or Southern Comfort. When you add the alcohol let it sit for at least an hour and then roll like normal. Soooooo good.
