Slow Cooker Guinness Pot Roast

The crockpot isn’t the most glamorous of kitchen equipment but it can be oh-so-very handy – and you can make food that doesn’t involve any cream of soup cans. This dark beer stew is very easy to make in the morning and will make your house smell wonderful all day.

The recipe calls for a pot roast cut of beef, but stew meat would work just as well. If you don’t like or have Guinness you can substitute another stout easily. Serve with crusty bread, we also served it on top of spaghetti squash.

Slow Cooker Guinness Pot Roast

(serves 4-6)

1 onion, large dice
4 cups roughly chopped potato or sweet potato or both
1 kg beef blade roast
1 teaspoon oil
salt and pepper
2 cups quartered mushrooms
1 cup Guinness or comparable stout
one large sprig of rosemary and thyme

1. Put the onion and the potato and sweet potato in the crockpot.

2. Heat a medium skillet to medium high heat. Pat the roast dry and sprinkle with salt and pepper. Add the oil into the skillet and brown on both sides. Transfer to the pot on top of the other vegetables.

3. Add the mushrooms to the hot pan and allow to sit for 2 minutes before stirring, continue cooking until brown all over. Add the stout and allow to simmer down by half. Transfer to the crockpot along with the herbs and add a half teaspoon of salt.

4. Cover and cook on low for 10-12 hours. Before serving add seasoning if necessary.
