Grilled Honey & Ginger Chicken

We grill a lot of chicken, partly because it is easy and healthy but I also genuinely enjoy chicken breasts if they are well seasoned, cooked to be tender and juicy – and of course marinated in some delicious concoction. This honey and ginger chicken recipe is very straightforward and goes well with brown rice and sesame broccoli, but my favorite way to eat it is on a salad of mixed greens with grilled zucchini, toasted walnuts and feta cheese.

Sticky Sweet Grilled Honey & Ginger Chicken Recipe

(serves 2)

2 tablespoons honey
1 clove garlic, minced
1 tablespoon minced ginger
pinch salt
1 tablespoon vegetable oil
2 chicken breasts
cilantro for garnish

Whisk together the honey, garlic, ginger, salt and finally vegetable oil. Add your chicken, ideally marinate overnight, or for at least 30 minutes.

Heat your grill to high and carefully oil it. Remove the chicken from the marinade and put on the grill. Turn the heat down to medium heat and close the lid. Grill for 3 minutes then flip, grill for another 3 minutes and then flip. Depending on the thickness of your chicken, this may take anywhere from 6-15 minutes. Check the internal temperature (USDA recommends at least 165F) and remove to a plate when done. Sprinkle with fresh cilantro and cover the chicken with foil. Let it rest for 5 minutes before slicing and serving.

This recipe sounds delicious. But, don’t you find it helpful to pound the chicken breasts so that they are a uniform thickness before marinating and grilling? Otherwise, the thinner parts tend to be over-cooked and dried out by the time the thicker parts are cooked through.
