Strawberry and Arugula Salad Recipe

This is Part III of my Great Summer Salads series. Part I was a Grilled Apple, Walnut, Blue Cheese and Mesclun Greens, part II was Squash, Goat Cheese and Mesclun Greens Salad.

Simple summer salads…

…with peppery, freshly cut arugula from the your own vegetable garden…

… and small, perfect, sweet strawberries from down the road.

Strawberry and Arugula Salad Recipe

(serves 2)

6 cups fresh arugula leaves
1 cup fresh strawberries
1 teaspoon Dijon mustard
1/2 lemon, juiced
2 tablespoons olive oil
salt and freshly ground pepper

Put arugula in a large salad bowl. Slice strawberries and add to salad. In a small bowl whisk together mustard and lemon juice. Add a healthy pinch of salt and lots of fresh pepper. Slowly stream in olive oil while whisking.

Toss dressing with salad and serve.

This salad sounds fantastic! I love the dressing. Simple and satisfying.

One of my favorite salads is a strawberry spinach salad, so I know I’d love this one, too!
