Tomato, Caper and Artichoke Salad Recipe

Easy salads that can be served warm or cold are the key to stress-free summer entertaining. Roasted corn salad, fresh asparagus salad, and this tomato salad are perfect as they can be made a few hours ahead and they keep well. You can make a full meal of them too by just stirring in some cooked grains like quinoa.

Tomato, Caper and Artichoke Salad

(serves 4)

2 lb tomatoes, roughly chopped
2 tablespoons capers
1 can artichokes, thinly sliced
1/4 cup tomato vinaigrette
1/4 cup fresh parsley, roughly chopped

Combine all ingredients and toss well. Great if prepared an hour or two in advance.

Cubicle – I am admittedly obsessed with capers. They sell them at costco you know.
