Traditionally Caldo Verde is a Portugese soup made primarily with potatoes, onions, kale, and frequently a portugese cured meat such as chouriço or linguiça.
This version simply omits the meat for a healthy, Vegan alternative. Perfect to warm you up on a cold day.
Vegan Caldo Verde Recipe
(serves 2)
In a small sauce pan sweat the onions over medium low heat for 3 minutes. Add the garlic and sweat for 1 more minute stirring often so garlic doesn’t brown. Add the potato and cover with water. Stir in a 1/4 teaspoon of salt and a dash of freshly ground pepper. Cover and simmer for 20 minutes or until potatoes are very tender.
Allow to cool slightly and blend. Return to pot and bring to a simmer adding kale. Cook for 5 minutes or until kale fully cooked. If it is too thick add a tablespoon of water at a time. Taste and adjust with salt and pepper. Serve drizzled with olive oil.
