With the oven preheated and eggs already beaten, something needs to be baked, and fast.</p>

			<content:encoded><![CDATA[<p>Muffins, quite simply are both a creative outlet and a recycling program. These muffins are unique for their use of ground whole oats as their base, the high fiber content, and their ability to use up a bunch of soggy carrots good for little else.</p>

<p>Now, this muffin recipe uses a food processor. I generally have a rule that if I have to use the cuisinart, then I must try and use it as much as possible.  It has it&#8217;s purpose but I loathe washing that ugly thing, plus it takes up the whole dishwasher and I feel like I am treading heavily on the planet.  Crazy I know.</p>

			<content:encoded><![CDATA[<p>It&#8217;s zucchini season again, and with the season comes a severe abundance of zucchini.  Not everyone greets the season with the enthusiasm I do, which is why this is such a great muffin recipe.</p>

<p>These extremely healthy muffins not only include a vegetable and very little fat but are whole wheat as well.  Of course, by using whole wheat pastry flour they stay ultra light and are perfect for a little treat with tea.</p>

<div class="print-this-content"><em>Zucchini and Rhubarb Whole Wheat Muffin Recipe<br />
(makes 12 muffins)</em></p>
<p>1 1/2 cups grated zucchini<br />
1 cup brown sugar (packed)<br />
1/2 cup milk<br />
1 teaspoon vanilla<br />
2 eggs<br />
3 tablespoons canola oil<br />
2 1/2 cups whole wheat pastry flour<br />
1 1/2 teaspoons baking soda<br />
1 teaspoon cinnamon<br />
1/2 teaspoon salt<br />
1 teaspoon baking powder<br />
1 cup chopped rhubarb</p>
<p>Preheat oven to 350F.  In a food processor* set with the grater attachment grate zucchini. Remove zucchini and change the accessory to the blade attachment. Add sugar, milk, banilla,  eggs and oil and process for 1 minute until well combined.  Stir in the zucchini.</p>
<p>In a medium bowl combine the flour, soda, cinnamon, salt and baking powder and stir.  Gently stir in the wet mixture, and when almost combined stir in the rhubarb.<br />
Pour into lined muffin tins and bake for 20 minutes.</p>
<p>* Note: Feel free to do this without a food processor, you will simply need to grate the zucchini by hand and beat the wet mixture by hand.<div class="clear"></div></div>

<p>Using an electric mixer or a wooden spoon and a bunch of elbow grease, cream together butter and sugar. Add egg, vanilla and banana and beat until well combined. </p>
<p>Stir together flour, salt and baking powder in a small bowl.  Add dry ingredients to wet and stir three or four times to mix together.  Add milk and stir until just combined. Fold in raspberries. </p>
<p>Line a muffin tin with muffin papers and divide the mixture amongst the tins.  Bake for 25 minutes.<div class="clear"></div></div>

			<content:encoded><![CDATA[<p>I am pondering the idea of conducting research on just how many days per year both local strawberries and rhubarb are available in the Vancouver area.  My guess is that it is only about 20, our strawberry season is always terribly short.  Plus, when I have access to tiny little jewel-like strawberries I can never bear to bake with them.  The intentions are there, but I usually just shovel them in my mouth.</p>

<p>So typically it is actually when rhubarb is in season that I bake with strawberry and rhubarb.  In these strawberry rhubarb muffins the rhubarb is local but the strawberries are from California.</p>

<p>Once a strawberry has been picked, put in a package, which is then put in a crate, shipped to my supermarket and made available for me to purchase it is a ghost of what it once was.  Of course the upside is that I can restrain myself from eating it long enough to put it into a pie or in this case strawberry rhubarb muffins.</p>

			<content:encoded><![CDATA[<p>Sometimes when I am lying in bed at night I compose recipes. Lately, I seem not to be counting sheep as much as rhubarb. Rhubarb and ginger persists to keep me awake at night and much like trying to rid your brain of an Abba song, I am inclined to put the song on repeat.  So here is another rhubarb and ginger recipe.</p>

<p>I suppose it isn&#8217;t all bad. Rhubarb is finally in season after all, and since I was <em>burdened</em> with an armful of it from my in-laws I am following up my <a href="http://www.dailyunadventuresincooking.com/2010/04/rhubarb-ginger-muffins.html">pumpkin, rhubarb and ginger muffins</a> with another healthy baked good. This time it is based on my <a href="http://www.dailyunadventuresincooking.com/2009/07/whole-wheat-zucchini-and-cherry-bread.html">whole wheat zucchini and cherry bread</a> and my <a href="http://www.dailyunadventuresincooking.com/2009/06/rhubarb-and-ginger-compote.html">rhubarb and ginger compote</a> recipes.</p>

<p>When I envisioned this the batter baked up pink, but sadly the powers of positive thinking don&#8217;t reach quite that far.</p>

<p>The key to getting this recipe right is to make sure you have a fairly dry compote; if it is liquidy strain some of the syrup out first. Don&#8217;t toss the syrup out.  It makes a great mocktail when mixed with soda water, and while you are at it add some gin.  If I can&#8217;t sleep someone should.</p>
<p>Rhubarb is still stuck in my head. I am sorry if I put it in yours as well, but I am likely to keep humming this tune for a few more weeks. I do have a big bag of it in my fridge after all.</p>

<div class="print-this-content"><em>Whole Wheat Zucchini, Rhubarb and Ginger Bread Recipe</em><br />
(makes 2 loaves or 24 muffins)</p>
<p>2 1/4 cups zucchini, grated<br />
3 eggs<br />
1/2 cup oil<br />
a scant cup sugar<br />
2 teaspoons vanilla<br />
2 cups <a href="http://www.dailyunadventuresincooking.com/2009/06/rhubarb-and-ginger-compote.html">rhubarb and ginger compote</a><br />
2 cups whole wheat flour<br />
1 cup flour<br />
1/4 teaspoon baking powder<br />
1 teaspoon baking soda<br />
1 teaspoon ground ginger<br />
1 teaspoons salt</p>
<p>Preheat oven to 350F. Prep zucchini by grating it on the thickest setting on a cheese grater. Set aside. In a mixing bowl beat eggs until light and foamy. Add oil, sugar and vanilla and beat to combine. Stir in zucchini and <a href="http://www.dailyunadventuresincooking.com/2009/06/rhubarb-and-ginger-compote.html">rhubarb and ginger compote</a>. In a separate bowl stir together dry ingredients. Stir dry into wet gently don’t over mix.</p>
<p>Spray two loaf pans with cooking spray or rub with oil. (If you would prefer to make muffins line your muffin tins with papers.) I made one loaf and a dozen muffins with this recipe. Divide batter between loaf pans or into muffin cups. Bake loafs for approximately one hour or muffins for 25 minutes.  Until a toothpick comes out clean. Allow to cool on a wire rack.</p>
<p>This freezes well, wrap in plastic wrap and then aluminum foil and make sure it is completely cool before freezing.<div class="clear"></div></div>

			<content:encoded><![CDATA[<p>Any day now rhubarb will be back in season and when it is I will be making another batch of these ginger, pumpkin and rhubarb muffins. Simply put, these rhubarb muffins are amazing; the tart rhubarb is perfectly compliment by the spicy ginger. </p>

<p>These ginger and rhubarb muffins are extremely moist thanks to the pumpkin.  In fact they were so moist and delicate you really can&#8217;t tell that they are healthy muffins made with whole wheat flour.  We also had a batch of <a href="http://www.dailyunadventuresincooking.com/2009/01/oatmeal-raisin-cookies.html">oatmeal raisin cookies</a> in the house, but found ourselves eating these healthy muffins for dessert instead.  The <a href="http://www.dailyunadventuresincooking.com/2008/11/pumpkin-ginger-muffins.html">pumpkin and ginger muffin recipe</a> is one of my favorites which I make all the time.  I adapted that recipe to use here but instead used both ground and fresh ginger to really make the rhubarb muffins extra spicy.</p>

<p>Since I was using frozen chopped rhubarb I put it directly into the muffins. I just gave the rhubarb a quick rinse under water to defrost it enough to break apart the pieces. </p>
